There's Nothing Like Cooking with Home-Grown Vegetables
Ex-Marine and police officer Jim DeVito grows all kinds of vegetables, but takes special pride in his peppers and his zucchini, which he uses to make his favorite meals. Jim grew up in an Italian family in Brooklyn, and cooking has always been a big part of his life. Fresh ingredients are the key to making the best food, and there's nothing fresher than going out to the garden and picking what you've grown yourself.

Fresh vegetables are the best!
Fresh vegetables are beautiful, nutritious and add great flavor to your meals. Plant your favorite veggies anywhere - in the ground or in containers. First, decide which veggies to plant and sketch your garden layout on paper. Then prepare your soil by tilling four inches of Miracle-Gro® Garden Soil into the existing soil. Sow seeds or plant seedlings at the right time for your climate and space. Zucchinis and peppers should be planted after the last frost. Feed and water regularly with Miracle-Gro® Plant Food for bountiful veggies. Last but not least, spread two inches of mulch around plants to hold in moisture and prevent weed growth.

Jim DeVito's Zucchini Pie
4 cups sliced zucchini, unpeeled
1 cup onion, sliced thinly
2 cloves garlic, crushed
1/3 cup Olive Oil
1/2 cup chopped fresh parsley
1/4 teaspoon dry basil
1/4 teaspoon dry oregano
8 ounces shredded mozzarella cheese
1/2 cup grated parmesan cheese or pecorino romano cheese
3 eggs - well beaten + 1 egg white
5 tomato slices (5 to 6)
Preheat oven to 375
Mix all ingredients except for tomatoes into a large bowl.
Spray non-stick coating to 13x9" glass baking pan.
Pour mixture evenly.
Layer tomato slices on top of zucchini.
Sprinkle cheese on top of tomatoes
Bake for 20-25 minutes until edges brown.
Remove from oven and let stand for 15 minutes before serving.
Sausage and Peppers
6 (4 ounce) links sweet/hot Italian sausage
1 large yellow onion, sliced
1/2 red onion, sliced
2 cloves garlic, minced
1 large red bell pepper, sliced
1 large yellow bell pepper, sliced
4 Tbsp Extra Virgin Olive Oil
Place the sausage in a large skillet over medium heat, and brown on all sides.
Remove from skillet.
Add Olive Oil in a medium heat large skillet.
Add onions, garlic and peppers, cover and simmer until they are tender.
Return sausage to skillet with peppers and onions.
Reduce heat to low, cover, and simmer 15 minutes, or until sausage is heated through.
Place ingredients on favorite soft roll and enjoy!
